Our boned and butterflied shoulders of lamb are perfect for a barbecue centrepiece. Marinade overnight with some punchy flavours (Ras El Hanout or Baharat) and then simply grill for approximately 10 minutes on each side over medium hot coals – you want a internal temperature of around 57°C.
