Short Rib Tail Joint (1.5kg)


Origin: Cheverton Farm, Shorwell, Isle of Wight
Salt-Aged: 14 days


This cut comes from the tail end of the Jacob’s Ladder. Previously it was used as trim for our premium blend burgers, but we discovered that rolled as a small joint it offers a fantastic new cut. It needs a low & slow cook and works very well as a pot roast.

Alternatively we have been cutting them into 30mm thick discs and barbecuing them 3 to a skewer, Churrasco-style. On the barbecue grill they need slow indirect heat.
