The under blade fillet is cut from the single Teres Major muscle in the shoulder, this cut is lean with a touch of marbling and not far off the better-known fillet. The downside is that we only get two per beast (totalling about 1kg). Great cut across the grain into little medallion steaks, whole or even cut into strips for a decadent stir-fry.
